Warm Chicken Soup =)

I caught the cold that's been going around and I was really craving for some warm soup. But what's fast and homemade that's not too much work for a sick person? I found something on AllRecipes and made my own version of it.


about 7-8 servings
Ingredients:
  • 0.8 lb chicken breast (cubed and cooked)
  • 3 carrots, chopped
  • 6 red potatoes, peeled and chopped
  • about 1/2 pound of egg noodles
  • 7 cups of water
  • 1 1/2 – 2 tsp of chicken bouillon
  • salt and pepper to taste
1. Stir fry chicken with some olive oil and sprinkle some salt on chicken when almost done. Be careful not to overcook.
2. Put chicken into water, cover and bring to a boil. Lower heat to medium.
3. Place carrots, potatoes, egg noodles in with the chicken and water.
4. Cover. Let it simmer for 10 minutes.
5. Add chicken bouillon to pot and simmer for another 5 minutes. You can add some pepper and salt.
6. Cover and simmer for 5 more minutes.
7. Pepper and salt to taste.

And tonight, after all that chicken soup, I craved more comfort food.... I discovered an easy way to make swedish meatballs. =) It's a recipe I got off of Cookingwithkrista's blog. The only difference was that I added peas. I felt the need to add some green veggies in there.
