Delicious Apple Walnut Bread


This past Halloween weekend I had fun baking this yummy bread. The original recipe is from My Tasty Treasures. Other bloggers and reviewers had raved about it and now I am too! I'm a fan of apple and walnuts, so that was my choice of chopped nuts. It's one of the best homemade breads I've made.

Apple Bread recipe (yields 2 loaves)

Ingredients:
- 2 cups sugar
- 1 cup oil (I used canola oil. It's lighter, healthier and it won't override the taste of other ingredients.) Override is a computer term and not a cooking term but you get the point. =P
- 3 eggs (beaten)
- 3 cups flour
- 1 tsp salt
- 1 tsp cinnamon
- 1 tsp baking soda
- 2 tsp vanilla
- 3 cups apples (peeled and chopped)
- 1 cup chopped nuts (I used chopped walnuts cuz they taste awesome with apple.)

Directions:

1. Preheat oven to 350 degrees.
2. Beat sugar, eggs, and oil in one bowl.
3. In separate bowl, sift together flour, salt, cinnamon, and baking soda.
4. Add dry ingredients to the wet ingredients.
5. Add vanilla, apples, and nuts to mixture.
6. Spray 2 loaf pans with cooking spray and add mixture to the pans.
7. Sprinkle tops of mixture with sugar.
8. Bake for 45 minutes or until toothpick comes out clean.
